In this issue we travel to Japan through its cuisines, a privileged way to
understand the essence of a country that transforms the everyday act
of eating into an art in itself. We then cross our borders to pause in La
Rioja, a land where wine converses with the earth and with a spirituality
that has set its rhythm for centuries. We will also wander through villa-
ges that preserve the quiet of autumn, such as Letur or the Subbética
Cordobesa, where the landscape becomes intimate and the paths echo
